Mummy Makes Muffins

With Elijah getting bigger by the second, we're having to come up with new tasty and healthy things for him to munch on. His current favourites would have be spaghetti bolognaise and custard. We recently tried him on pancakes which he really liked too.

I really enjoying cooking for him and have been so excited to make muffins for him to try. So this morning, I did!


Banana, Pear & sultana mini muffins

INGREDIENTS:

1 cup wholemeal SR Flour
1 egg
1 ripe banana
1 ripe pear
1/2 cup olive oil
1/4 cup sultanas
1 Tbsp milk
Cinnamon or mixed spice




                           
 

- Pop your flour in a mixing bowl and sprinkle in your spice.




- Peel and finely chop the pear, mash the banana and mix together with the sultanas and oil.
- Stir together milk and egg.
- Put it all together and mix until combined.



- Spoon into greased mini muffin trays

 

- Cook in moderate oven until risen and cooked through (a skewer inserted should come out clean)
- Voila!


 

So simple and Elijah seemed to like them... I think :P
